Selected fees

  • Royalty6% of the preceding week's Gross Sales, due Monday.

    Gross Sales excludes customer taxes remitted to authorities and documented refunds, credits, allowances, and chargebacks. It includes business-interruption insurance proceeds. Fees can continue during closures; see the closure FAQ.

  • Advertising contributionAn Advertising and Development Fund contribution is required.

    Based on weekly Gross Sales, using the same definition as royalty. Separate from required local advertising spending.

  • Local marketingAt least $2,500/month; up to $5,000 may be required; $1,500 reduction is conditional.

    Full capacity means all tables booked 8 a.m.-8 p.m., seven days a week. Spending may rise to $5,000 below 80% utilization, fall to $1,500 after 90 days at 80%, and rise again if utilization drops. Use approved suppliers and materials. If a cooperative is established, up to 2% of Gross Sales is due weekly and counts toward the $2,500 local requirement.
